Some of you already know that I’ve been conducting a wild amount of yogurt-making experiments lately. And while I love just eating plain yogurt (yes, I know this isn’t normal) I was thinking about crunchy topping options. Unfortunately as much as I love a lot of the commercially available grain free granolas, many of them have too much sugar/carbs for my liking. And these very same granolas are extremely difficult to STOP eating once I open the bag. Too many times I’ve eaten the whole bag, and that’s a problem.
Because I love to solve problems, it was time to figure out a solution and make my own grainfree granola that checks all the boxes.
Simple Grain Free Granola
Equipment
- 1 Half Sheet Pan
- 1 Sheet of baking parchment optional but recommended
Ingredients
- 1 1/2 Cup Coconut Shreds
- 1/2 Cup Walnut Pieces Add more if you wish
- 1 tsp Coconut oil
- 1 tsp Powdered vanilla extract Optional but recommended
- 1-2 tsp Cinnamon The best you can find - or use your favorite pumpkin pie spice blend
- 1/4 tsp Allspice not necessary if you use pumpkin pie spice - it's already in there
- 1 pinch mineral salt just a teeny bit!
- 1-2 tbsp Allulose syrup or Honey Or your favorite alternative liquid/syrup sweetener
- 1/2 Cup Raisins or chopped dried fruit Optional - leave out or use less if you're keeping this low carb
Instructions
- Preheat the oven to 350 Degrees Fahrenheit
- Add a sheet of baking parchment to the baking sheet
- Add the coconut shreds and walnuts to the baking sheet
- Drizzle the coconut and walnuts with the melted coconut oil, mix well so that everything has a thin coating
- Spread the mixture out on the sheet so that it's in a near single layer.
- Bake on the middle rack for 5 minutes, then check and stir. If not golden yet, put back in the oven and check again in minute intervals. This stuff gets overcooked FAST. Don't walk away!
- When golden, put the mixture in a large bowl and drizzle with the liquid sweetener of your choice, mix well.
- Evenly sprinkle the mixture with the spices and mix well again
- Wait for the mixture to cool then store in a well sealed container. Try not to eat it all during this step.
