I LOVE THIS COOKBOOK. Seriously. I do not invoke “all caps” for just anything. Alicia Streger, RKC has been a big fan of Paleo/Primal eating strategies and until I saw this book, I had not given it too much thought other than making the occasional recipe found online. A little secret is that I eat somewhat low carb on a regular basis, but will go extremely low carb for short periods of time (this is something I cycle through naturally). So I’m always looking for good ideas. This cookbook is full of good, tasty, satisfying ideas that you and your friends will love.
An older friend of mine is diabetic and has been exploring unusual coconut ingredients, so I was extra pleased to find that this cookbook used so many of the items he had been bewildered as to how to use. The huge bag of coconut flour he gave me some time ago is out on the counter and used to delicious effect – coconut pancakes, pumpkin muffins!!! All delicious, low carbohydrate, low glycemic, and packed with nutrition.
Some of the recipes are very simple, and require very few ingredients – others a little more preparation and perhaps a trip to a high end grocery or well stocked healthfood store – but it is worth it. Oh and be prepared, you’re going to need a LOT of eggs. The Primal Blueprint Cookbook is highly recommended!
