Tropical Steak Lettuce Wraps by Aleks Salkin

Ingredients

  • 1/2 pineapple Use half a fresh pineapple and dice it up
  • 1 lb steak sirloin (Or favorite steak of your choice)
  • 1 can black beans
  • 1/2 cup cilantro fresh (chopped and loosely packed - or to preference)
  • 1 onion Small onion, diced
  • 3 jalapeno peppers fresh (Aleks suggests a mixture of serrano and jalapeno peppers - chopped fine)
  • 1 head romaine lettuce Or any other sort of leafy green

Instructions

  • Cook or grill the steak til it's done enough for your tastebuds (I always cook my steaks in olive oil or chili-infused olive oil and season them with salt and pepper and cook them pretty rare). At the same time, have your pineapple pre-diced and your black beans cooking in the microwave. Once the steak's done, dice it and throw it back into the pan along with the diced pineapple and black beans. Cook a little longer and let everything mix together.
  • Depending on how much or how little you want, you can add cilantro, onions and the peppers into the mix, or add it to each individual serving (I like to just throw it all in). To serve, take large, fresh Romaine lettuce leaves and spoon out enough to be able to wrap up in the leaf (kinda like a taco shell) and enjoy! Other options besides the Romaine lettuce might include collards, cabbage, or even corn tortillas. It's really, really good and doesn't require much of anything fancy.
