Salmon and Goat Cheese Satisfaction - Guest Recipe from Aleks Salkin, RKC

Ingredients
- 1 lb salmon fresh wild caught
- 2 oz goat cheese Soft chevre style, Aleks suggests the kind at Trader Joe's
- 2 oz onions red (diced small)
- 1 T garlic chopped
- salt to taste
- black pepper to taste
Instructions
- Aleks: Some people think I'm crazy. Maybe it's the hair, maybe it's my love of lifting heavy stuff, or maybe its because of how much I like cheese. I'm snooty when it comes to cheese, and it has to be good - and if it's good, trust me, I'll do my damndest to put it on anything. One of my favorite things to put cheese on is fish, and one of my favorite cheeses around is goat cheese. If you're starting to join the crowd in thinking I'm crazy, hang on for a sec and hear me out. Goat cheese goes remarkably well with a lot of things (I have no idea why, but I've done the experiments and I can tell you it's true), and fresh, wild caught salmon may very well be the best combo around. And it doesn't stop there.
- In a small bowl, add your onions, garlic, a sprinkle of salt and pepper, and your goat cheese. Mix 'em all up until everything's evenly distributed (don't be afraid to get your hands dirty!). Prep a pan with olive oil (as much as you want - I like a loand add the salmon. Cover it with a baking sheet and flip as needed. When the salmon is done, put it on a plate and spoon out the goat cheese/onion/garlic mixture as evenly as you can over the top. Let it melt for a little bit, and then go nuts! Serve it with a big, leafy green salad, kick back, and enjoy. Some might think you're crazy for mixing salmon and goat cheese, but, well, you'll know the truth.
- The vegetables I put the fish over are spinach, Italian parsley, and baby herb lettuces. As a bonus tip, I poured the excess fish-infused olive oil over the top of the veggies to make them extra delish. Extra bonus tip: when in doubt, use more cheese!
