I was chatting with an old friend of mine the other day about food stuff – he’s your typical mid-20s bachelor type – collects records, works hard at a creative desk job, parties hard and well… its starting to show… in the tummy region. DUN DUUUUN.
Sorry boys, but after a while, even with your metabolisms, eating a lot of pizza and drinking beer at 2-3AM will catch up even with YOU… but there’s hope… and its cheap! And you like it!
Everyone likes “Breakfast Dinner” right? Makes you think of college? We used to make all sorts of breakfast dinner and late night home made diner style food in the questionable community kitchens at the dorm. I even have “breakfast lunch” sometimes… its easy to make, easy to figure out the calories and make necessary adjustments for your needs that day/meal. Besides… its a great excuse to break out the bacon! And steak… its not just for dinner anymore.
Here’s some ideas to get you going – and again… when in doubt… cook up some BREAKFAST!
- Start with 2 slices of uncured bacon like from our friends at Applegate Farms, when browned, remove the slices to a paper towel, swipe out a little of the grease if you wish and then throw in diced sweet potato – brown it up like hash browns. Remove to a plate and quickly cook some scrambled eggs, or be lazy like me sometimes and just crack 2-3 eggs right on top of the hash browns and cook over easy…. serve with the bacon and YOU ARE DONE. Only one pan to clean. Excellent.
- Start again with the bacon, or add a little coconut oil to your pan (or saved bacon grease) then saute whatever appropriate veggies you may have – I used mushrooms and zucchini that were nearly past their prime – add in some eggs like above and maybe some grated cheese – delicious! ONE PAN!
- Make your own breakfast sausage patties with organic ground pork and Penzey’s Spices Breakfast Sausage seasoning mixed in. You’ll never look back. I cook these up 1-2lbs at a time (broken up into 1/8lb patties) and store the extras in the refrigerator. These are so good I am guilty of eating them without reheating.
- Do you have leftover steak? Slice and reheat in the pan – then cook your eggs, etc. Personally I don’t understand the concept of leftover steak, but just throwing that out there for you.
