This is an example of something I eat pretty regularly – it works great for 1-2 people. You need a well seasoned cast iron skillet to make it work. Likewise, all the ingredients – all four – must be of the utmost freshness and quality.
Ingredients for one:
- 1 strip Applegate Farms Sunday Bacon
- 6-8oz Grass Fed Sirloin Steak
- 1 medium sized organic zucchini squash – not too thick – we are going to cook it and want no raw bits inside. Slice the zucchini in half lengthwise – being sure to make both halves as flat and even as possible.
- high quality sea or mineral salt – I used Himalayan Mineral Salt
- (optional fresh ground black pepper if you must have 5 ingredients)
Heat your well seasoned, well oiled cast iron skillet to a solid medium – cook the bacon until crispy and make sure the fat has rendered and further coated the pan. Sprinkle a little salt on both sides of the steak and place it in the middle of the skillet, with 1 half of each zucchini squash piece on either side of the steak. When the zucchini has browned on the cut side, flip it – check the steak and flip it as well – cook the steak to desired doneness, and make sure the zucchini is browned and soft. If you are like me, you ate the bacon while the zucchini and steak were cooking, if not, use it as some kind of garnish. I sliced the steak because I haven’t yet purchased the fancy-schmancy Damascus steak knives on the wish list, otherwise I would have plated it whole.
