In case you're thinking of boiling eggs this weekend, I wanted to put these posts together for you. Eggs are awesome anyway, so any excuse to highlight these nutritional powerhouses is a good one! Hardboiled eggs are a favorite grab and go snack (even at the airport--look for them at the more "gourmet" snack stands and shops). Just a little salt and pepper and they're fabulous, but if you have a few minutes, a few ingredients, and a ziplock bag, you can make some fairly fancy deviled eggs without too much effort (or cleanup). I love deviled eggs so much I even have a special plate for them now...
While I'm linking the article to the Julia-Child-Inspired method of hardboiled egg cooking, I also want to show you a favorite little kitchen device I bought from Amazon a while back and am just bonkers about. So much so that when I told my parents about it, Dad assumed that I must be selling the. I included one with their Christmas gifts this year and when they used it they soon understood what all the fuss was about. It's effortless and the eggs are just THAT much easier to peel. I hate peeling eggs... Anyway this little thing is very inexpensive and if you enjoy eggs, and/or want access to easy low carb natural snacks like hardboiled eggs, then absolutely go get one.
If you don't have time to get one and/or you have a bunch of kids who want a BUNCH OF EGGS at once to dye and decorate then definitely go for the Julia-Child-Inspired Method.
Well well... now that everyone has boiled a bunch of eggs, it might be time to jazz them up! Here's the deviled eggs recipe and video. AND remember you can always halve or quarter the eggs and use them on the sides of salads etc. One of my favorite uses of leftover roast chicken and leftover hardboiled eggs is this very hearty salad, my take on Salad Olivier--and if you're going low carb, you can always leave out the potatoes, though there's some evidence that cold, cooked potatoes are a great source of resistant starch too. :)
