Tuna, Avocado, and Bean Salad

A simple fresh salad full of flavor, protein and nutrients

Ingredients

  • 1 Adobo seasoning to taste to taste, choose a shaker variety without msg
  • 1 black pepper to taste
  • 1 can Mixed Salad Beans 15oz can Westbrae Naturals Organic Mixed Salad Beans
  • 1/2 Avocado Florida (you may also use 1 whole Haas Avocado instead)
  • 1 can Tuna Canned (5oz Can, Low Sodium Solid White Albacore)
  • 2 green onion Coarsely chopped
  • 1/2 tomato small, seeded and chopped
  • juice of half a lemon
  • 1/2 cup cilantro Freshly Chopped Leaves

Instructions

  • Drain the can of tuna and place it in a large bowl. Rinse and drain the can of beans and place them in the bowl too. Add the avocado cubes, cilantro leaves, onion bits, tomato bits and lemon juice. Mix and taste then season with either salt and pepper to taste or with the Adobo seasoning. Serve in the bowl (if you're like me and plan to eat all of ior place atop lettuce leaves on a large plate.
