Beyond Organic Beef Jerky Trail Mix Exotica

Salty, Sweet and full of nutrition, this quick jerky trail mix is fun to modify depending on what you have on hand.

  • 1/2 package Favorite soft grass fed beef or lamb jerky with a VERY sharp chef knife, chop into tiny pieces -- approx the size of chick peas
  • 2 oz raw organic coconut flakes large (Blue Mountain Organic brand was on sale...)
  • 1 oz dried goji berries I like the organic ones from Navitas Naturals

Instructions

  • First, place the beef jerky sticks on your cutting board and retrieve (and hone on your steel...) your heaviest chef knife. Cut the beef jerky sticks into little pencil-eraser (or chickpea) sized pieces.
  • Place these in a bowl before adding the coconut shreds and goji berries. Mix well then grab a small portion -- do you like the ratio of ingredients? If not, adjust them slightly and try again.
  • I like the ratio as presented above but we all have our reasons... If you need more carbs for a long hike consider adding extra dry fruit. Other items can be added too - unsalted nuts and seeds would be good additions.
  • The main thing with trail mix is to have fun with it - some chipped up dried unsweetened, unsulfered pineapple could be tart and fun for instance! Make sure you get a little bit of jerky, coconut, and goji berry in each small bite. Delicious!

Notes

Don't get me wrong, I loved the products from Beyond Organic -- they were a regular part of EVERY day. HOWEVER... while the BBQ flavor all grass fed beef jerky has a soft texture, the Original Recipe in its current form is hard and for my tastes at least, a little too salty. I had to figure out how to make it easier to eat, and cut down the saltiness, so after a few failed attempts (like cutting and soaking it in fresh mango juice... which made salty mango juice and very ugly looking jerky) I remembered a kind gift of a Paleo Pack from a friend. Hmmm what about making it into a trail mix?! Go for bonus nutrition and enjoy this with a serving of plain kefir. Prepare to be unstoppable.
