Basic Meatballs

Make these ahead, and flavor them when you reheat them! Quick! Easy! Efficient!
Course: Main Course
Cuisine: High Protein, Low Carb, Paleo
Keyword: meat, meatballs, paleo
Servings: 4

Ingredients

Ingredients

  • 1 egg well beaten. If it is a large egg, use half.
  • 1/3 cup almond meal Alternately I use crushed walnuts
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper fresh cracked
  • 1 lb grassfed ground beef

Instructions

  • Preheat Oven to 350 Degrees Fahrenheit.
  • Mix all ingredients throughly (I usually wash my hands VERY well and use them!) and form into 11-12 little round meatballs.
  • Place on a cookie sheet and bake for approx 15-20 minutes depending on your oven and how you like your meatballs. At the very least, make sure the internal temperature reaches 145. Food thermometer.... it is your friend.
  • After baking, eat with the sauce of your choice, add to marinara sauces, or store in the fridge or freezer. I like to make meatballs ahead and add to them all sorts of things - soups, different sauces, the possibilities are endless. And sometimes I eat them cold right out of the fridge!

Notes

Breadcrumbs are for the birds..........
Of course these meatballs are also really good put into squashes like the Halloween Faux Monkey Brains recipe (use the variation on that page though, for bigger meatballs) and the Faux Meatball Sub!
