In a large measuring cup (with a spout), I use a wire wisk to beat the eggs first then add in the water, the the protein powder, the baking powder and optional salt. Blend very very well then set aside (I leave the whisk in it to whisk it up even more before cooking). You might want to try a blender, or electric whisk if you have it.
Grease a large griddle or griddle pan with a cooking oil spray or light coating of cooking oil of your choice (bacon grease anyone?)
Heat the pan to about "medium" as these cook a little more quickly than regular pancakes... don't walk away during any portion of the cooking!
Pour these pancakes small and watch them closely so you can flip them when ready. Bubbles will appear at the top, and the edges will pull away from a well greased pan. Use a large spatula, they can be fragile on the first flip.
Serve topped with your favorite pancake toppings traditional or otherwise. I'm still happy with ham, brie, and or a soft cooked egg... mmmm.
