Minimalist Protein Pancakes

For whatever strange reason I am not a fan of sweet pancakes or sweet crepes... while I can't remember the last time I ordered pancakes in a restaurant or made traditional ones at home, I do love the occasional ham and brie crepe with egg.
After going through the cabinets, I found a canister of plain, grassfed whey that I need to use sooner rather than later - the "best by ______" date is coming up at the new year. This plain whey is absolutely perfect for making the savory version of these protein pancakes. If you want, please feel free to try this recipe with a vanilla or even chocolate whey protein if you're not a fan of the savory version. You could even top them in a more traditional manner as well if that fits your goals and nutrition plan. Adding toppings during cooking like a few blueberries, thin slices of banana or strawberries, pecan pieces, chocolate chips, coconut shreds can also be delicious. If this is the case, definitely leave out the pinch of salt.
I'm going to make this again this week in my ham and brie topped version and take a photo for you. In the mean time, here's the recipe. I was inspired by the simple recipe here (a low carb but more traditional sweet pancakes application).

Ingredients

  • 1/4 cup Water
  • 2 Tbsp Water Yes a little more water... you'll see
  • 2 Eggs beaten
  • 2 scoops Plain whey protein powder see summary
  • 1 tsp baking powder
  • 1 pinch salt of your choice
  • 1 bit coconut oil, bacon grease, etc. your choice!

Instructions

  • In a large measuring cup (with a spout), I use a wire wisk to beat the eggs first then add in the water, the the protein powder, the baking powder and optional salt. Blend very very well then set aside (I leave the whisk in it to whisk it up even more before cooking). You might want to try a blender, or electric whisk if you have it.
  • Grease a large griddle or griddle pan with a cooking oil spray or light coating of cooking oil of your choice (bacon grease anyone?)
  • Heat the pan to about "medium" as these cook a little more quickly than regular pancakes... don't walk away during any portion of the cooking!
  • Pour these pancakes small and watch them closely so you can flip them when ready. Bubbles will appear at the top, and the edges will pull away from a well greased pan. Use a large spatula, they can be fragile on the first flip.
  • Serve topped with your favorite pancake toppings traditional or otherwise. I'm still happy with ham, brie, and or a soft cooked egg... mmmm.
