In a somewhat Frankenstein way, I combined the Coconut Pancake recipe from thecookbook (highly recommended) with the ideas from the Probiotic Pancakes from the magazine. This is quite possibly the healthiest pancake recipe that I know of - if you know about a better one, please share it immediately.
